1 large onion
6 garlic cloves
10 guajillo chiles
5 ancho chiles
2 pasilla chiles

Enough water to cover the meat

Corn tortillas
Melt cheese (Oaxaca, mozzarella)

Preparation:
Marination and cooking: Combine the meat with the onion, garlic and spices. Cover with water and cook over low heat for several hours until the meat is very soft and shreds easily.
Chili sauce: Toast the chiles, remove the seeds and blend them with a little of the cooking broth. Add the sauce to the pot with the meat.
